Sauvignon Blanc

Our Sauvignon Blanc grapes are growing on a vineyard called Klumpa, which we planted in 2000. To really express the vineyard in the bottle, we are harvesting the grapes in three stages. At the first stage we harvest 10%-15% a bit earlier to catch the green flavors. At the second stage we harvest the grapes at approx. 92-95 Oechsle for the right taste.  During the third harvest we pick the grapes slightly overripe to get more concentration, structure and a pleasant mouthfeel.
